Salt Rock Red Blend Van Ryn's The entry expression in theThe Salt Rock Red Blend features Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Shiraz, and Cinsault. Grapes were selected based on their potential rather than their region, with blocks sourced from the cooler parts of the Western Cape to encourage slow ripening. All batches were picked at optimal ripeness, and the grapes were cooled before processing. The cultivars underwent fermentation in open top fermenters with four punch downs per
